I made this meatloaf this holiday season and it was loved by everyone, vegan and non-vegan. A crunchy surface, which encloses a tasty and soft meatloaf, made with chickpeas, mushrooms and vegetables. The secret ingredient to make this recipe perfect is definitely the Chia Egg, or a preparation based on chia seeds, which becomes the perfect egg substitute and makes the dough soft and easily workable.
This simple and tasty dish will definitely satisfy your cravings and your conscience!




Ingredients:
- 460 g of cooked chickpeas
- 350 g of Mushrooms
- 100 g of breadcrumbs
- 1 roll of vegan puff pastry
- 2 carrots
- 2 sticks of celery
- 1 onion
- 1 tablespoon of tomato paste
- 1 tablespoon of Soy Sauce
- Extra virgin olive oil
- Thyme to taste
- Oregano to taste
- Sage to taste
- Paprika to taste
- rosemary to taste
- Salt to taste.
For the Chia Egg
- 1 and a half tablespoons of Chia Seeds
- 60ml of Water
Procedure:
Chop carrots, celery and onion and cook in a pan with a drizzle of oil and a spoonful of tomato paste, until golden brown. Cut the mushrooms and cook them in a pan with a spoonful of soy sauce until they are well cooked. Then, in a container mix the chia seeds with 60 ml of water, mix and let it rest for 10 minutes, so that the mixture becomes gelatinous.
Blend the chickpeas to obtain a homogeneous mixture. Add the sautéed carrots, celery and onion, the mushrooms, the chia seed mix, the breadcrumbs and all the spices to taste to the mixture. Knead with your hands until you obtain an easily mouldable and compact compound. Shape the dough into a meatloaf.
Wrap the meatloaf in the puff pastry, making it adhere well to the edges of the dough. Make cuts on the surface and brush with oil. Then, bake in a preheated oven at 200° for about 50 minutes or until the pastry is golden brown and crunchy. Serve hot with seasonal vegetables and potatoes.
